There is nothing better during the holidays than delicious Christmas cookies and a nice mug of hot cocoa.

Santa Shortbread Cookies
For this toaster oven shortbread cookie recipe, we started with this simple recipe that we found on YouTube. We really loved this recipe, because it was so simple with only four ingredients.
- 1 Cup Flour
- 1 Cup Sugar
- 1 Stick of Butter (Softened)
- 1 Teaspoon Star Vanilla
- Cream the butter, sugar and vanilla.
- Add the flour.
- Mix until the flour is incorporated well.
- Roll out the dough.
- Cut with a Santa shaped cookie cutter. (We really liked this one)
- Pop the cut out cookies on to your toaster oven tray.
- Bake at 300F for 13-15 Minutes in your toaster oven.
- Remove from pan and place on a cooling tray.
- Decorate with colored icing and candies.
Be sure to watch these closely the first time you make them, as baking time varies slightly from toaster oven to toaster oven.

Chocolate Chip Cookies
There is nothing quite like a classic chocolate chip cookie. Truth be told, we always use our toaster oven when we make chocolate chip cookies. The reason we do so is, toaster ovens always make the best chocolate chip cookies.
Those of you who want to make chocolate chip cookies in your toaster oven have several options.

In General, toaster oven cookies don’t take nearly as long to bake, because a toaster oven is a smaller area to heat than a traditional oven. Watch your cookies closely, as they will likely not take as long as they would in a traditional oven.
- Better ingredients make better cookies.
- Use Great chocolate, fresh butter and good flour.
- Chill the dough before you bake.
- Place your cookie dough in the refrigerator for 15-20 minutes before baking.
- Mix well in the beginning
- Mix your sugar, butter, eggs and vanilla well, but when you start to add the dry ingredients, don’t over work the dough.
Chocolate Snow Dusted Christmas Cookies
We found this recipe over at What’s Cooking America. We followed the recipe exactly, but adjusted the times slightly for the toaster oven.
The recipe says to bake for 20-22 minutes, but we only had to bake them for about 15 minutes in the toaster oven. They came out rich, moist, chocolaty and delicious. Don’t forget to dust them with powdered sugar when they cool!
- 4 tablespoons butter (1/4 cup)
- 4 (1-ounce) squares unsweetened chocolate
- 2 cups granulated sugar
- 4 extra-large eggs
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts
- 1 cup powdered (confectioner’s) sugar
- Gather all ingredients
- In a heavy bottomed sauce pan heat chocolate and butter over low heat
- Remove from heat
- Stir in sugar
- Add eggs one at a time and beat well
- Sift in dry ingredients (flour, baking powder, and salt)
- Stir until no lumps are present
- Add nuts (optional)
- Cover and refrigerate for about 2 hours
- Preheat toaster oven to 300 degrees Fahrenheit
- Line cookie sheet with parchment paper.
- Roll cookie dough into 1” balls and roll in powdered sugar.
- 13. Bake 15-20 minutes until cookies are barley firm to the touch.
- 14. Remove to cooling rack.
Tips:
- Butter or sugar your hands before rolling cookies into balls to prevent sticking.
- Allow cookies to stand for 1-2 minutes before removing to cooling racks
- Do not over bake, watch the cookies carefully.
Lofthouse Style Sugar Cookies
For decades Loft House Cookies have been one of America’s favorite cookies, but did you know that you could make these cookies at home in your toaster oven?
We tried it out and we have to say that these cookies are nothing short of amazing. Next time you are in the mood for Loft-house cookies give it a shot!
One of the reasons that I love these cookies so much is that they are extremely versatile. You can make the for Christmas and just about any other occasion too, by simply changing the icing and sprinkle colors.
To bake these in your toaster oven, simply shorten the baking time by about 5 minutes. Make sure to keep an eye on them the first time.
For the Cookies
- ½ C Sour Cream
- 1 C Sugar
- 2 Eggs
- ½ t Vanilla Extract
- 3 C All-purpose flour
- 1 ½ t Baking Powder
- ½ t Baking Soda
- ½ t Salt
For the Frosting
- 4 C Powdered Sugar
- 2 t Pure Vanilla Extract
- ½ C Butter
- ½ C Shortening
- Food Coloring
- Candy Decorations or Sprinkles
- In a large bowl combine sour cream, eggs, sugar, butter, and vanilla; mix well.
- In a smaller bowl combine dry ingredients (flour, baking powder, baking soda and salt. Add the dry ingredients to wet mixture and mix well.
- Roll cookies into 1” balls with your hands, then place on an ungreased cookie sheet. Press lightly to flatten just a bit.
- Bake in a pre-heated 350 degree toaster oven until light golden brown (5-8 Minutes)
- For the frosting, mix butter, vanilla, and shortening in a stand mixer on high until light and fluffy.
- Add powdered sugar ½ cup at a time.
- Add food coloring if desired.
- Once cookies are cooled enjoy frosting and decorating them.
Tips:
- Make sure to keep an eye on these the first time you make them.
- Do not over bake these, they may seem a bit under done, but they are not.

Gingerbread Star Christmas Cookies
- 3/4 cup butter, softened
- 1 cup packed brown sugar
- 1 egg
- 3/4 cup molasses
- 4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1-1/2 teaspoons baking soda
- 1-1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Vanilla frosting of your choice
- Red and green paste food coloring

We followed the recipe exactly, but we did reduce the baking time by a few minutes. For the icing, we used our tried and true powdered sugar icing recipe(below). We were very impress with the results!
Simple Powdered Sugar Icing
- 1 C Powdered Sugar
- 1 Teaspoon of vanilla
- 3-5 Tablespoons Milk
- Mix the powdered sugar and vanilla by hand with a spoon.
- Add milk one tablespoon at a time until the icing creamy.
Tips:
- Try out different shapes with different cookies cutters.
- These are great to make for kids to decorate on Christmas Eve.
Many traditional Christmas Cookie recipes can be converted to toaster oven cookie recipes, simply by reducing the baking time. It takes a little bit of practice, but if you watch your cookies closely, banking in a toaster oven is not much different than banking in a traditional oven.
After trying several different cookies in our toaster oven, we are convinced that toaster ovens bake the best cookies. If you don’t have a toaster oven, you really should consider adding one to your kitchen.
