Easy Baked Chicken
You need about 4 ounces of chicken breast (remove the skin), ¼ teaspoon of thyme, ¼ teaspoon of oregano, ¼ teaspoon of rosemary, freshly-ground black pepper, salt and a tablespoon of olive oil.
Line the over toaster pan with aluminum foil. Place equal amounts of spices on both sides of the chicken breast. Place chicken on the aluminum foil-lined pan and pour olive oil over the chicken.
Bake placing the toaster oven on “bake” setting for about 35 minutes in 350 degrees Fahrenheit.
Baked Chicken Recipe 2
This is another variation of baked chicken but to make chicken more flavorful, the meat is marinated beforehand.
You need a piece of chicken breast or a whole chicken thigh marinated for about four hours in buttermilk or soy sauce, garlic, pepper and bay leaves.
Preheat your toaster oven to 350 degrees Fahrenheit or use the “bake” setting on the oven. You may coat the chicken with corn meal, salt and pepper, paprika and garlic or you may use breadcrumbs seasoned with spices.
Place aluminum foil over the toaster oven tray and then spray oil or drizzle olive oil. Place the coated or non-coated chicken on the tray, drizzle more oil over the chicken to avoid drying the meat. Bake for about 45 minutes until the meat is done.

Broiled Chicken with Lemon and Sage
You will need 2 boneless and skinless chicken breasts cut into halves, 3 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 2 tablespoons of fresh sage leaves chopped into small pieces, a small clove of garlic minced, ½ teaspoon of grated lemon zest, ¼ teaspoon of ground black pepper and a dash of salt.
Flatten boneless chicken with a mallet and then set aside. In a mixing bowl, combine oil, sage leaves, lemon zest, lemon juice, pepper and salt. Place the chicken in the mixture and then place in a resealable bag to marinate for about 6 hours or overnight.
Heat the toaster oven by placing it in broil. Add ¼ cup of water to the drip tray of the toaster oven; place the chicken on the broiling pan and then cook through for about 15 minutes.
Turn the chicken and then continue cooking for another 15 minutes. Serve your lemon and sage chicken garnished with fresh lemon slices and sage leaves.

Roasted Chicken with Herbs
You need about 7 ounces of chicken tenders, a tablespoon of olive oil, ½ tablespoon of herbs, 2 tablespoons of Dijon mustard, a tablespoon of honey, salt and freshly ground black pepper.
Prepare your toaster oven by heating it to 450 degrees. Place the toaster oven tray in and drizzle with olive oil. Season chicken with salt, pepper and herbs. Place the chicken pieces on the tray and then drizzle with olive oil on top to avoid drying.
Bake the chicken pieces for about 8 to 10 minutes; check the meat and continue cooking until it is cooked through. Prepare the honey and mustard mixture. Serve the chicken together with the honey- mustard sauce on the side.

Chicken Sandwich
This is made from leftover chicken, tomato, mozzarella cheese, basil and whole-grain bread. Shred or flake leftover chicken and then set aside. Place tomato, cheese, basil and flaked chicken in between two slices of whole-grain bread.
Heat your Breville toaster oven to about 250 degrees Fahrenheit. Place chicken sandwiches in the toaster oven tray and then toast until the cheese pieces are melted. Cut the sandwich into two before you serve.
You may also try a bread-less version by placing cubed or chopped leftover chicken in skewers. Put skewers on chicken along with cherry tomatoes, red peppers and corn. Bake this for about 15 to 20 minutes in your toaster oven.
